Hummus & roasted pepper veggie wrap
Share
A hummus veggie wrap is an easy way to bring a few simple ingredients together. Chickpeas add texture, spinach brings a fresh layer and roasted peppers add colour.
For one wrap
- 1 large tortilla
- 2 tablespoons hummus
- About ⅓ cup ready-to-eat chickpeas, drained
- A small handful of washed baby spinach
- A few strips of ready-to-eat roasted pepper, drained
Spread, fill and fold
- Spread the hummus across the centre of the tortilla, leaving the edges clear.
- Add the spinach, chickpeas and roasted pepper. Lightly mash some chickpeas if you prefer a filling that is easier to roll.
- Fold the two sides inward, bring the bottom edge over the filling and roll gently to close.
- Wrap the assembled tortilla in a suitably sized food-wrapping sheet for serving.
A small preparation detail
Drain the chickpeas and peppers well before assembling. Too much liquid makes a wrap harder to fold neatly. Start with less filling and add more on the next wrap if your tortilla has room.
Planning lunch?
Keep ingredients and prepared wraps stored according to their labels and appropriate food-storage guidance. Wrapping helps organise the meal; it does not replace any required refrigeration.
